I'm wondering in what order should I install them? I assume this may be a good order, but I'm not sure:
1) S60-SDK-200634-3.1-Cpp-f.1090b
2) s60_openc_plugin
3) Carbide.c++
I set up this order because I think the s60 SDK must be installed before installing the Carbide editor. Is this correct??
Any suggestions??

The order is correct but I do hope you're not planing to use this SDK with your Nokia 6630 phone :)
Just out of interest, why must the S60 SDK be installed before installing Carbide.c++?
What happens if (heaven forbid) you don't intend to do S60 work but want to use Carbide.c++ with UIQ? Must you still install the S60 SDK? Must you first install the UIQ SDK then Carbide.c++ or does the order of SDK and Carbide installation not really matter?
Installing the SDK first is obviously not a requirement but the order mentioned above is as good as any other :)
Thanks for these great advices. No I'm not going to make appz with this SDK for my n6630. I'm just a newbie and I accept that my mobile is not up to date. So instead of running the app on the mobile I use an emulator instead. While saving money every month so I can buy a new modern phone. My main focus is to develop my skills on Open C programming, and for that I only need an emulator - but having a real device would be much better.
