Very interesting! I have started with a similar thing this month. The following table shows the percentage of received money from the estimated revenue (for my best-selling item):

For explanation: The first column is the percentage from the estimated revenue that was really paid out (e.g. 14% in November), the second column is the percentage of paid out operator billing based payements respectively credit card payments.
The next table shows the average revenue per item (e.g. if the item costs 1€ then 100% equals 1€; according to the Ovi aggreement it should be 70% for credit card and 60% operator billing starting with October 2010):

What you see is that the revenue per item is a bit higher than expected (due to price differences in different countries). Further, operator billing seems to have a delay of at least 2 months (e.g. no operator payment received for Oct/Nov with the December payment).
All data includes payments from June 2010 to December 2010. The latest payment from January 2011 is not included yet.
