It was indeed the proxy settings on the handset, and with the help of the forums...

I managed to write a provisioning script, and send it to the device.
The net result... everything works a treat.
The moral of the story...
If you have an awkward service provider, and an S40 phone where your midlets won't connect, then take a look at ravidavi's thread, and the one on howard forums, it's quite suprising what you can do when your able to send your own provisioning scripts to the phone :-)
Thanks to all who had an input on this one, feel free to ask me advice in return...
Especially if you wanna know the inner depths of a GSM mobile network and how it ticks...
