how to change my mobile's language setting?

Hello, hope someone can help to me solve the problem.
I have a new E71 which bought from Australia, the phone is installed with English system only which cannot type, send and also read chinese words esp. for TXT msg.
But I will back to Hk soon, and I need the phone able to read T.Chinese.
How can I do it?
What abt update the phone's firmware from HK's nokia website?
Or any other way can help me?
If the phoen can send and show Chinese, it almost has no function to me in HK!
