Designing an E-Learning Suite for M.A.D.

M.A.D. is short for Mobile Application Development , just in case your wondering.
The summary of my question is:
I wanted to know how the FN e-learning course screencasts are put together.
I , and a couple of other people,wanted to put together a group of e-learning screencasts and training videos that enlighten people ,in my country, about mobile devices and mobile application development in Nigeria. The idea is a tad bit larger than what i just explained, but the aforementioned is the core-base.

The e-learning suites,among other things, are to be distributed free in CDs to students at my school, (and anywhere else in Nigeria where it's needed).
