Is there any document(s) anywhere that specifies which of the AT commands listed in the AT-help.pdf doc is supported by which phone models / GSM terminal devices?

No. You may have noticed that some of the newer phones do not support certain commands from the AT-command set document.
This document will be updated within about 1 month with a more current set of AT commands, but it will also be a general guide, and will not be phone specific.
