Could the various files making up the MMS be sent over bluetooth directly to the phone from PC, then provide some (java) app which sits on the phone and then encapsulates the parts back into an MMS message, which is then received by the phone? Or not?

You might try posting this question to the Symbian discussion board to see if something along these lines is possible with the Series60 SDK, but I'm not optimistic.
